How is Tea Made?

Tea comes from the Camellia family which is native to China.  All tea comes from this family of plants. Varieties of camellia have been developed to suit different preferences.

What makes teas different?
You can consider tea manufacturing to be similar to winemaking.

The different degrees of oxidization (also known as fermentation). In addition to the specific variety and growing conditions, age of the leaves and part of the plant where the leaves are harvested, plus the degree of hand processing all affect the quality, therefore the grading of teas. For example, white teas, green teas and black teas have increasing levels of oxidization. Teas made from the youngest, new spring tips are considered highly sought after luxuries.

Some luxury teas are hand “rolled”, a process which bruises the leaves and creates specific chemical reactions (through exposure to air) and therefore distinctive colors and flavors.

The processes involved in creating Wu-Yi tea are truly an art form crafted by experts, involving hand picking, rolling, oxidization (partial fermentation) roasting and drying.
